They are available as whole, or halves (price is the same). A $100 non-refundable deposit is needed on all orders and will be credited to your total price. 

Quarters may be available at a later date (~20% price premium and cutting order will be made for you) I am not taking deposits on quarters until September, people who order wholes and halves will get priority before then, however you can have your name put down on the list to get the quarters that are still available in September. 

We have four Dexter heifers and four steers to be butchered at 18-19 months of age all raised here on the farm. Dexters are a small, fast maturing breed of cattle (mature cows are around 800lbs compared to 1200-1600 for conventional breeds) and one thing to keep in mind with smaller animals like these, is that the size of the cuts of beef are proportional to the size of the animal (a finished Dexter cow can be around 2/3rds or less the size of the larger animals that are processed through commercial feedlots).

They will be butchered October 26th and the meat will be available around two weeks later. 

The price is per pound and by hanging weight (this is the weight of the animal after it has been skinned and gutted). This includes the butchering fee, with most locker beef you will be asked to pay the butchers fee separately (usually between $600 and $700 for a whole cow). The estimated weights, prices, and storage space that are given are just that, estimates, and have the potential to vary widely from actual weight. The beef will lose 20%-30% of it’s weight (moisture loss) while it is dry aged. One cubic foot of freezer space will hold 35 to 40 pounds of processed frozen meat. Animals will be butchered with a mobile slaughter on farm and processed by C&C Slaughter in Scio. If you want your processed meat delivered I will make an effort to do that, or you can pick it up yourself a your convenience.

Total storage space and weight of the processed meat will vary based on cutting instructions (bone in or bone out and shape of the cuts). The butcher will call you before they cut up your animal and get a cutting order from you. Cattle processed in quarters will be given generic cutting instructions by me and then divided up in half and distributed to customers. Feel free to contact me with any questions.
